Gazpacho Salad with Grilled Shrimp

Gazpacho and summer go hand in hand, especially when tomatoes begin to ripen on their vines and burst with sun kissed goodness. I often make gazpacho when I have an abundance of tomatoes and cucumbers in my garden. This year, I am a bit of an orphan, having left my home and garden in South Africa to visit friends and family throughout the Northeastern United States and Canada. Needless to say, I do not have any of my own veggies but I do have the local markets and memories of past summer delicacies.

When I was asked to prepare a main course salad for a dinner party last week, I decided to take vegetables, that are typically found in a gazpacho, and create a salad rather than a soup.  To round out the dish, I decided to add some slightly spiced grilled shrimp as the protein. The response was a very positive one though my host did mention that day 2 of the salad was even better than day 1! Good to know that this salad makes great leftovers.

[i]A wonderful summer salad to enjoy with a crowd.[/i]
Ingredients
  • [br][b]Shrimp:[/b]
  • ½ cup olive oil
  • 2lb (907gm) shelled, raw shrimp
  • 2 garlic cloves, chopped
  • 1tbsp chili powder
  • 1tbsp cumin
  • ½ tsp cayenne pepper
  • 1 lime rind
  • 1tbsp lime juice[br][b]Gazpacho salad[/b]
  • 6 tomatoes
  • 2 garlic cloves
  • 6 mini cucumbers
  • 1 jalapeno peppers
  • 4 peppers (multi coloured)
  • ½ tsp honey
  • ½ red onion
  • ½ C olive oil
  • 3 tbsp chopped cilantro
  • 2 tbsp fresh lemon juice
  • 2 tbsp chopped basil
Instructions
  1. Place wood skewers in a bath of wine and water and let soak for an hour to reduce burnt skewers.
  2. Mix olive oil, garlic cloves, chili powder, cumin, cayenne pepper, lime rind and lime juice together and pour into a ziplock bag.
  3. Add shrimp and let sit for an hour
  4. Place shrimp on skewers before grilling over medium heat.
  5. Cooking time aprox 10-15 mins.[br][b]Gazpacho salad[/b]
  6. Chop tomatoes, cucumbers, peppers and onions into similar sized pieces and place in a large bowl.
  7. Pour vinaigrette over vegetables
  8. Mix in fresh herbs
  9. Once shrimp are grilled, place over salad and serve.
